Awesomely easy fudge recipe! It makes about 5 pounds of fudge though...

24 oz package semisweet chocolate chips
1 (7 ounce) jar Marshmallow Crème
4 1/2 cup granulated sugar
3 tablespoons butter
1 (12 ounce) can evaporated milk
Pinch of salt
2 cups chopped nuts (optional, though I like adding candied cherry pieces instead of nuts)

Grease large glass pan with butter. Place chocolate chips in a large mixing bowl.

Combine milk, butter, salt, marshmallow cream in pot. Heat slowly and add sugar gradually. Boil for 6 minute, stirring constantly.

Pour hot syrup over chocolate mixture; stir with a wooden spoon until smooth. Add nuts and mix well. Spread fudge into the pan. Let cool air cool, then you can toss it in the fridge if you want or cut it into squares.

You can substitute half the semisweet chocolate chips for dark chocolate/baking chocolate for a less sweet and richer tasting fudge.

mayhemdragon: Sticky Caramel Corn

Sticky Caramel Corn

This is best when you use an air popper because the popcorn is crisper that way.

1/2 cup butter
1-2 cups brown sugar
1/2 bag of marshmallows
1 large bowl of plain popped popcorn

Melt the butter on low heat in a saucepan. Then add the brown sugar a little at a time until it is well blended into it. Start adding marshmallows slowly until you thicken it up a bit. When it's a bit thicker than caramel, but thinner than the marshmallow goo for Rice Krispy Treats, it's done. Pour over the popcorn, stirring it so it spreads everywhere.

While it's still warm, if you wish, you can roll it into balls and make little 'on the go' snacks for later.
